* 2 cups rice
* 2 cups water * 1 cup coconut milk * ½ cup desiccated coconut * ½ tsp salt * 1 onion, minced * 1 clove garlic, minced |
1. Wash rice and place in a heavy saucepan. Pour in water, coconut milk, desiccated coconut, salt, onion and garlic. Stir to mix thoroughly and bring to the boil.
2. Stir once more, then cover with a lid, reduce the heat and simmer for twenty minutes. Coconut rice can be made a day before and reheated by steaming. Or place in a greased baking dish, add ½ cup water, cover with aluminum foil and heat in a moderate oven for twenty minutes. |
